Here are 12 simple vegan meal ideas for dinner and can be made into lunches for tomorrow. These are very fuss-free meal ideas based on a Ready-Steady-Cook mentality of what ever is in the fridge and pantry. I’ve listed all the ingredients to make the meal to show how easy it can be, if you don’t have one ingredient, just use whatever you have in your kitchen 🙂
12 Simple Vegan Meals
1. Black rice & Corn fritter bowl
Ingredients: Black rice, tomato, edamame, shittake mushrooms, ginger, sauerkraut, pumpkin seeds, nori seaweed sheets, hummus (chickpeas, water, lemon, olive oil), corn fritter (frozen corn, plain flour, baking soda, flax seed, oat milk)
2. Creamy mushroom spaghetti (oat milk for the cream)
Ingredients: Durum wheat spaghetti, coriander, chestnut mushrooms, béchamel sauce (oat milk, plain flour, salt), vegan parmesan (nutritional yeast, cashews, salt), pepper.
3. Noodle soup with fried tofu
Ingredients: Ramen noodles, miso paste, chestnut mushrooms, fried tofu, tahini, coriander, chinese cabbage
4. Tofu fish salad
Ingredients: Cos salad, cherry tomatoes, fried tofu, fried fish pieces (asian brand), avocado, shredded beetroot
5. Vegan Sushi
I felt like I had to buy a few specialty staples before getting ready to make this meal. I would suggest heading to an asian grocery store to pick a few items up.
Ingredients: Brown rice, carrot, chestnut mushrooms, avocado, capsicum, wasabi, soya sauce, nori seaweed sheets
6. Rice vermicelli with salad
Ingredients: Rice vermicelli, mint, sunflower seeds, cherrie tomatoes, coriander, carrot, cucumber
7. Tofu fish & chips
Ingredients: Assorted frozen chips, fried tofu (medium firm tofu, nori seaweed sheet, lemon juice, plain flour batter), fried mushrooms
8. Green Curry
Ingredients: Lemon grass, ginger, broccoli, spinach, curry powder, carrot, walnut, tofu, quorn pieces, capiscum
9. Vegetable stir fry
Ingredients: Shitake mushroom, carrot, soba noodles, capsicum, ginger, fried tofu, lemon
10. Spaghetti with avocado
Ingredients: Spagetti, avocado, shredded carrots, vegan parmasen (cashew, salt, nutritional yeast), basil, capsicum
11. Tofu burger
Ingredients: Bun, fried tofu, carrot, tomato, rocket, avocado spread, vegan sliced cheese
12. Lasagne – made cashew cream instead of ricotta
Ingredients: Quorn mince, lasagne sheets, cashew cream cheese, chickpeas, canned tomatoes, beans, carrot, capsicum and other diced vegetables
